The science of pickling has come a long way since grandma’s day, meaning her old cookbook’s ever-so-tempting recipe for gherkins could leave you — in a pickle.

For up-to-date guidance on how to create mouth-watering, shelf-stable treats at home, Tillamook’s OSU Extension Service is offering “Canning Tomatoes, Salsa & Pickles” on Saturday, Aug. 24.

Students will learn how to can safely and in accordance with USDA recommendations, including details like how to get the vinegar-to-water ratio just right. Participants will also get to can a jar of salsa or quick pickles to take home and share with their families.

The class will run from 10 am to 1 pm at the OSU Extension Service office in Tillamook. Cost is $15 for supplies and handouts if registered by the Thursday prior to the class or $20 thereafter. Classes with low pre-registrations might be cancelled.
